🛒 Ingredients:
1 lb ground beef
1 can diced tomatoes or Rotel (drained)
Taco seasoning (I love the clean ingredients in Siete)
Salt & pepper to taste
7 eggs
½ cup heavy cream
Shredded Mexican cheese blend
Green onion (optional)
Sour cream (optional, but highly recommended)
👩🍳 How to Make It:
Brown the beef in a skillet over medium heat. Add taco seasoning and a little water per packet instructions. Let it simmer and soak up that flavor.
In a bowl, whisk 7 eggs with ½ cup heavy cream, salt, and pepper. Set aside.
In a greased casserole dish, layer the cooked beef on the bottom.
Drain your canned tomatoes or Rotel and spread it over the beef.
Pour the egg mixture evenly over the top.
Sprinkle with Mexican cheese (don’t be shy).
Bake at 375°F for 30–35 minutes, or until the center is set and the top is golden and bubbly.
Top with green onions and sour cream if you’d like. Slice it up and serve!
